Spinach Artichoke Dip

Recipes for garlic spinach or spinach artichoke dip are a dime a dozen, but this one is different. Heated gently, rather than baked, it is smooth and flavorful and never oily. Serve over sourdough baguette slices or crackers or as a dip for veggies. The perfect addition to any appetizer spread, yet substantial enough to stand alone, it’s great for New Year’s or anytime you need a crowd-pleasing starter.

A water-bath fondue pot is a great way to keep this warm throughout your next party. My favorite is here.



Spinach Artichoke Dip
12 oz package frozen chopped spinach
14 oz can artichoke hearts, drained and chopped
2-3 cloves garlic, minced
½ cup mayonnaise
Two 8 oz packages cream cheese, softened
2 Tablespoons lemon juice
1 cup grated Parmesan cheese

In a saucepan or fondue pot, mix cream cheese and mayonnaise.
Add remaining ingredients and heat over medium-low until smooth and heated through. Stir often to avoid scorching.
Serve with sliced or cubed sourdough or French bread, crackers, or sliced vegetables.
