I did not grow up eating fish. The only seafood I remember was the occasional tuna casserole and it didn’t take long before I refused entirely to eat even a single bite of that.
Shortly after, I entered my vegetarian years, which lasted until I was nearly through college, and continue to influence my tastes even today.
Nowadays, I prefer fish over any other “meat.” I know people who don’t consider poultry or fish “meat,” but I do. This simple salmon skillet is one my family’s all-time favorite dinners.
It’s adaptable to whatever veggies and sauce you have on hand, so feel free to substitute what’s in your garden, produce drawer, or freezer. I only add the fresh basil when I still have some in the garden. This year we savored a beautiful zone 8 extended summer, and I had plenty on hand until the end of November.

Salmon Primavera Skillet
Olive or avocado oil for sautéing
2 tsp Italian herbs
3-4 cups diced vegetables (green beans, cabbage, eggplant, peas, peppers, broccoli, cauliflower, etc)
3 salmon portions (6-8 oz each)
One large jar marinara sauce. I like White Linen, which I get at Costco and is 40 oz.
1/4 cup fresh basil, chiffonade, if you don't have fresh basil, simply leave this out
1/4 cup kalamata olives, sliced, optional
1 lb pasta cooked in salty water until al dente
Parmesan Cheese for serving
Heat a large skillet over medium heat for a minute. Add oil and swirl to coat pan. Add onion and sauté for several minutes until it begins to turn golden.
Stir in the Italian herbs and stir constantly for 30 seconds. Add all the veggies to the pan and sauté, stirring often, 3 minutes.
Nestle the salmon pieces in among the veggies, trying to get each down to the bottom of the pan.
Add marinara sauce and bring to a simmer. Simmer 10-12 minutes, until salmon is just cooked through. Meanwhile, salt the water and cook the pasta.
Serve salmon and sauce over pasta topped with Parmesan cheese.
