Protein Power Balls

My dear friend shared this recipe with me and it is, by far, my kids’ favorite power ball. With three sources of high-quality protein, they are definitely worth the carbs brought by the honey and mix-ins.

The protein powder is optional, though you won’t taste it and your kids won’t even know it’s there. You can add a second scoop to boost the overall protein content. My favorite brand is blenditup Protein+ because it has a very mild taste and the protein comes from ingredients that I know and recognize.

For the mix-ins, feel free to use whatever combination your family will enjoy. We like dark chocolate or a combo of dried cherries and blueberries. The kids, of course, would never complain if I always added one of the candies, but I try to vary the recipe so the candy remains an occasional treat. Happy snacking!

Protein Power Balls

4 cups rolled oats
1 cup flax seed, ground
1 cup honey
2 cups peanut butter
1 tsp vanilla
1 scoop (30 grams) unflavored or vanilla protein powder (I like blenditup Protein+)
1 1/2 cups mini chocolate chips or mini Reese's Pieces or mini M&Ms or dried fruit (blueberries, cherries, cranberries, apples, apricots. Chop any large fruit into small pieces)

Mix all ingredients in a large bowl until well blended. You will likely start this with a rubber spatula and then discard that for your hands and knead it more like dough to get everything evenly distributed.
Scoop the mixture 1-2 Tablespoons at a time into the palm of your hand and roll into balls.
Store in an airtight container in the fridge. Separate layers with a sheet of waxed paper to prevent sticking
